Coloring Foodstuffs
 

Phytone offer a range of Non-Speck Powders designed to provide:

  • An even color in both liquid and powder foodstuffs.
  • An even color in powder foodstuffs which does not cause ‘specking’ when made up into the finished product by addition of water or milk.
  • A non-leaching color which does not ‘run’ when added to one phase of a multi-component foodstuff.
  • A color system which shows increased stability in both liquid and powder systems.
  • A color system which is convenient to use and mixes very rapidly throughout a powder blend.
  • A color system which masks the uneven appearance of a dry mix.

    These colors are primarily designed for use in opaque foodstuffs and are available in a wide range of color shades.  Most are synthetic although natural non-speck colors can be produced e.g. annatto and carmine.

The superior blending properties of our Non-Speck powders is demonstrated left.  Both samples contain Carmoisine E122 at 100ppm in sugar icing and received the same level of mixing.  In the enlarged area
specking is clearly seen throughout the sample containing the undiluted pigment.

A characteristic feature of our Non-Speck powders is clearly demonstrated on the left  Their ability to provide color in a powder system makes them ideal for use in a dry mix product.  Both samples contain Carmoisine E122 in icing sugar at 1000ppm.

We also produce solubilised non-speck colors where instant solubility and clarity is important. These can be based on either lactose or maltodextrin or glucose.
